This recipe came on a card included with a boxed set from Jeff Granito and Tikiland Trading Co. my wife got me for Christmas 2024.
Tastes like a fancier riff on a PiƱa Colada. Coconut, pineapple, light rum, etc. but with some banana and made "classy" with some Amaro Montenegro.
Of course, light rum (aka. white rum) is a terrible description which encompasses a very broad range of flavors. Based on the rest of the recipe, I assumed it meant a standard Spanish style, column still, probably aged and then filtered rum. Instead, I used Ten to One Caribbean White Rum. It's an interesting blend of unaged Dominican Republic column still rum (so Spanish style, just unaged, rather than aged and filtered which strips out flavor) and unaged Jamaican pot still rum. More flavor than something like Don Q Cristal or Cruzan Aged Light without straying too far from the likely expected rum like going all in with Wray and Nephew Overproof White or something. Another more interesting, but not too crazy choice would be El Dorado Three year.
