Tonic Rickey
Maybe the first no alcohol mocktail I've enjoyed as something which fit the same flavor profile I'm looking for with many cocktails. I think it's the bitterness from the tonic water.
Ingredients

| Angostura Bitters | 3 dash | |
| Demerara Syrup 2:1 | 1⁄2 Fl. Oz. | The recipe just says simple syrup, but I almost always use this instead. Sometimes reducing the amount of syrup, sometimes not. |
| Lime Juice | 1⁄2 Fl. Oz. | |
| Seltzer Water | 1 1⁄2 Fl. Oz. | |
| Tonic Water | 1 1⁄2 Fl. Oz. |
Directions
- Combine simple syrup and lime juice in a glass with ice and stir
- Slowly add tonic water and seltzer
- Top with Angostura bitters. Don't stir.
