Quarantine Order
A healthy dose of Don's Mix, a bunch of Rum, a way above average amount of Angostura Bitters, and some lime.
For my first take on this I had some Smith and Cross I needed to use up, so I used the last 1 oz of that and topped up with 1/2 oz of Plantation Xayamaca. I also used 1.5 oz of Appleton Estate Signature Blend as the original recipe uses. I'm not a man of many words, so I don't have much to say. This was good. It fills a nice spot between over the top cocktails with 10+ ingredients and the extremely simple "simple syrup + lemon juice + rum" daiquiri variants. It is easily dialed back a bit by using a lower proof rum in place of the Smith and Cross I used.
At Pagan Idol they use Rum-Bar Gold and Appletone Estate Signature Blend. Rum-Bar Gold isn't readily available in Virginia. On the /r/rum/ subreddit it is well respected, but online reviews suggest it's fairly tame and just a bit funkier than the Appleton Estate Signature Blend. That may make 1.5 oz of Plantation Xaymaca a more accurate substitution than Smith and Cross.
In the past the mix was Appleton V/X and El Dorado 5 year. As I understand it, V/X was the same rum as Signature Blend is now. That is also a great way to make it and may be what I do most of the time.
