Polynesian Headsplitter
The photo in the book has some chunks of mint leaves in the glass, so I think this is intended for a dirty pour. Notes about specifics of the rum are included with the ingredients.

| Aged Demerara Rum | 2 Fl. Oz. | The recipe calls for 2.5oz Lost Spirits Polynesian style, which is 132 proof and is no longer in production. It says to sub 2oz Planteray OFTD or failing that, a 151 proof Demerara rum split with a pineapple rum such as Planteray Stiggin's Fancy Pineapple. |

Directions
- Muddle mint leaves with sesame syrup and lime juice
- Shake all ingredients with crsuehd ice
- Pour into lowball glas
- Garnish with swizzle stick of rock candy
