The big differences between this and a daiquiri are the use of demerara syrup instead of a regular simple syrup and more freedom with the rum. This is a fun one to try with a variety of very different rums such as a black rum, an unaged jamaican rum, and a nicely aged demerara rum.
As with most of my initial recipes, I got this from the Smuggler's Cove book. They say their source is the book "And a Bottle of Rum: A History of the New World in Ten Cocktails". This is said to have come from the British Royal Navy as part of a plan to reduce drunkenness by watering down the rum ration a little.
You may want to let this sit in your glass and stir gently while the ice dilutes it a bit further or add an ounce of water to tone down the acidity a bit.
