Daiquiri No. 1
A simple mix of lime, simple syrup, and rum. There a lot of common ratios of rum:citrus:sugar which you may prefer. Smuggler's Cove goes with a very citrusy 6:1.5:1 which is close to the common 6:2:1. I like to go a slight bit more rum forward than that as I find that ratio heavy on the lime for my own tastes. I find that getting the right amount of dilution is key. Smuggler's Cove recipes mostly rely on crushed ice + a mixer to get the dilution correct. Just shaking with large cubes (as I usually do) or pouring over some large cubes and stirring (as I sometimes do when being lazy) can result in an overly acidic and limey drink until the ice melts a bit.
Most recipes call for a standard 1:1 simple syrup, but I follow Smuggler's Cove's lead and use their 2:1 demerara syrup where 1/3 of the sugar is demerara sugar.
I also really enjoy using 1/4 to 1/2 oz of Wray and Nephew White Overproof to add some excitement and balance the citrus. I cut the rum from this recipe back to 2oz in that case.
A spanish style rum is traditional, but Foursquare Probitas is a much loved option or Plantation 3 Star for a less expensive but similar rum. Because of the limited ingredients this is also fun to play with any other rum in.
