At Smuggler's Cove this is served in a hollowed out pineapple with a "mermaid island". The island is created by leaving the core in the pineapple and an umbrella and mermaid are placed on it. I am not sure if the mermaid is edible at all or just a vaguely human shaped plastic thing.

Overproof Demerara Rum | 3⁄4 Fl. Oz. | Recipe says "black blended overprooof". As a modern recipe, I suspect that really means Plantation OFTD. |
Lightly Aged / Filtered Rum | 1 Fl. Oz. | |
Rye | 1 Fl. Oz. |
Directions
- Add all ingredients except overproof rum to mixing tin
- Fill with 12 ounces of ice
- shake and open pour into glass or hollowed out pineapple
- Float overproof rum on top
